ORGANIC FOOD & SPECIALTY ITEMS

Community farmers are like family to Black Truffle. We use only fresh, sustainable seafood sourced primarily in California or the Mid-Atlantic region. We also offer specialty menus featuring invasive species of the Chesapeake Bay (identified by the Sustainable Fisheries Goal Implementation Team).

CONSERVING COMMUNITY RESOURCES

We have implemented ongoing practices that promote sustainability and the efficient use of resources. Black Truffle helps reduce food waste and conserve resources by:

  • Utilizing surplus-gleaning programs
  • Pickling, drying and employing other techniques that make the best use of vegetable stems and peels
  • Participating in composting programs
  • Partnering in cooking oil waste recycling programs
  • Recycling paper, cardboard, glass, and plastic
  • Limiting water usage through reusable cold packs and freezer sheets
  • Offering compostable plates, utensils and cups (and other required disposables) for food deliveries
  • Driving fuel efficient vehicles for deliveries

ECO CLEANING 🌱

At Black Truffle we pride ourselves in using Eco Mama cleaning services. They are a green cleaning company based in Scottsdale which uses eco-friendly cleaning products. Eco Mama provides services to Black Truffle 4 times per month.

GREEN KITCHEN

Our Kitchen is a semi-green kitchen. We have electric ovens and use induction burners to cook. This combination drastically reduces our need for gas use. We also implement the following into our program;

INDUCTION BURNERS & OVENS 🔥

By utilizing induction burner technology and convection ovens, we drastically reduce the amount of gas needed and used in our kitchen. This is our cleaner and proactive approach to reducing gas usage.

🎨 NON VOC PAINT

Our entire facility is coated with non VOC paint as an eco-friendly alternative. VOC’s (Volatile Organic Compunds) are as the name suggests, unstable and contain carbon compounds that rapidly evaporate into the air. As a result, they contribute to air pollution, causing a series of health issues related to breathing.

IN HOUSE TOWEL CLEANING ♻️

In an attempt to reduce waste, we do not use paper towels to clean up stills. We purchase our own towels and recycle them by cleaning towels ourselves with natural-safe cleaners. We also do not hire a linen company which often uses harmful chemicals that are not eco-friendly.

👨🏽‍🍳CROCKPOT & PRESSURE COOKER USAGE

To reduce ENERGY usage, crock pots and pressure cookers are incorporated in our cooking program.

CHEST FREEZERS ❄️

We use chest freezers as opposed to standing freezers as they utilize less power in our kitchen

RECYCLE PROGRAM 🌳

Black Truffle is part of the recycle program along with other business owners in our commercial complex. We also use Bio degradable bags in our kitchen.

🔌 NO DISHWASHER

All of our dishes are washed by hand with eco friendly chemicals. We do not use a restaurant dishwasher in our kitchen as they waste quite a bit of power and water.

LED BULBS SAVE ENERGY 💡

Our entire facility is equipped with LED light bulbs. LED bulbs use only twenty percent of the energy a normal light bulb consumes while lasting twenty five percent longer.

🚿 LOW FLOW AERATOR

Our low flow aerator, which is attached to our main sink valve, saves up to 700 gallons of water per year.

WE COMPOST OUR SCRAPS 🗑

In our kitchen, we have a separate bin where we put unused scraps such as herbs ends, carrot trimmings, potato peals, ends of vegetables, etc. We do not have a home composter but donate these to: Gruff Ranch in Mesa Arizona. Please visit: Gruffranch.com
